Yay for me, a sick day…

woke up this morning with a sore throat, blood shot eyes, and an achy body.now for the cure! Rice Porridge (asian variation of the common chicken noodle soup)

Ingredients: Simple

Time: 10-15 mins

Servings: 2 bowls for me

Ingredients;

1 cup of rice
(I used yesterdays leftover cooked rice, about 3 scoops worth)

1-2 tbsp of chicken flavored bouillon (The amount depends on how much flavor you want. If you wanted more flavorful porridge by itself try chicken broth as substitute for water, but your going to have to experiment with how much broth you will need)

Water
(The amount depends on how you want the consistency of the porridge to be like, personally when I’m sick I like it thin so I used about 3-4 cups of water)

Sesame oil (This is for taste, you don’t absolutely have to have it.)

Freshly grounded black & white pepper (Again solely for taste.)

Cooked & dried pork (Now even though this is for taste I highly recommend you use this. Its a dried product so it has a long shelf time and it’s great on everything.)

I started with a medium size sauce pan and added the leftover rice with the 3-4 cups of water. Brought that to a boil then lowered the heat to a simmer. Added the 1-2 tbsp of chicken flavored bouillon and occupationally stirred. The important thing to look for is the texture of the rice. It will change pretty quickly and depending on your desired end consistency you must know when to stop cooking. The longer you cook the porridge the thicker it will get as the rice breaks down and thickens the soup, so take that into consideration. After about 7 mins my porridge is done. The rice still retains its shape and the soup is thin. I serve myself right away as I like to eat it hot. Dash on some sesame oil and freshly ground black & white pepper. Then top it with a handful of cooked and dried pork.
